Lentil Dahl:
Serves 2
½ cup onion, diced
2 cloves garlic, minced
1 ½ tbsp curry powder
¼ cup vegetable broth
1 tsp cumin
½ tsp red chili flakes
½ tsp salt
¼ tsp pepper
1 cup red lentils (soaked and rinsed)
1 cup white onion, chopped
¾ pint grape tomatoes, chopped (or 1 can chopped tomatoes)
6 small red potatoes, cut in ¼ inch cubes
1 ½ cups cauliflower florets
½ cup light coconut milk
2 cups water

Pesto Zucchini Noodles with Mushrooms:
Serves 2
½ cup white onion, diced
4 oz baby bella mushrooms, chopped
2 large zucchinis, spiralized into noodle shapes
⅓ cup prepared vegan pesto
2 tbsp nutritional yeast
2 tbsp toasted pine nuts (optional, for serving)

BBQ Tempeh with Vegetables:
Serves 2
1 package tempeh, cut in triangles
2 tbsp BBQ sauce
4 cups red potatoes, quartered
1 tsp mixed herbs
½ tsp salt
16 oz frozen broccoli florets
1 tbsp coconut aminos (or soy sauce, tamari)
1 tbsp nutritional yeast
