Vegetable Stewed Rice | Sanjeev Kapoor Khazana

A one pot meal of fresh cut vegetables stew cooked with rice. A popular recipe from the Chinese Cuisine.



8-10 button mushrooms, cut into quarters
5-6 French beans, blanched and cut into pieces
5-6 baby corn, blanched and diagonally sliced
10-12 broccoli florets, blanched
1 medium carrot, peeled, blanched and sliced
1 medium green capsicum, cut into cubes
Steamed rice for serving
1 tablespoon oil
1 tablespoon finely chopped garlic
Salt to taste
1 tablespoon cornflour slurry
Sliced spring onion greens for garnishing


1. Heat oil in a non-stick pan. Add garlic and sauté well. Add mushrooms and mix well.
2. Add French beans, baby corn, sufficient water and salt, stir to mix and bring to a boil.
3. Add broccoli florets, carrot and capsicum and mix. Add cornflour slurry, mix well and bring to a boil.
4. Garnish with spring onion greens and serve hot with steamed rice.
