Vegetable Okoy / Ukoy Recipe (Kalabasa, Carrots and Malunggay)

Hi Foodies! Ukoy or Okoy is a popular Filipino fritter made from shrimp and vegetables. There are many varieties of Okoy and mine is packed with vegetables. It’s crispy on the outside, soft and fluffy on the inside. Taste vegetables in a different way-crisp and tangy. Served with vinegar dipping sauce or catsup, it is good as appetizer main meal.
