This simple vegetarian lentil soup recipe is so delicious and full of wonderful flavors! Its ready in under 30 minutes and yields about 4 large bowls of soup. Don’t forget to serve it with a big piece of crusty bread!
1/2 cup olive oil
1 yellow onion chopped
2 Carrots chopped
3 cloves garlic
1 teaspoon cumin
1/2 teaspoon thyme
1 28 ounce can diced tomatoes
1 cup lentils
4 cups vegetable broth
2 cups water
salt & pepper
1 cup chopped collard greens, kale or spinach (stems removed)
serve with fresh squeezed lemon
Start by adding the Chopped onions and carrots to your bot with the olive oil and garlic and saute until deep in color.
Add the spices and remaining ingredients and allow to simmer for about 20 minutes until the lentils are soft.
Take about a cup of the mixture and blend it and pour the liquid back into the soup.
Allow it to simmer 5 more minutes and serve with rustic bread.
