Cooking a pork roast with brown sugar, butter & garlic in Xiao’s Kitchen
Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.
Ingredients:
2kg Pork Shoulder (cut into 8 equal pieces)
1 Tsp Salt
1 Tsp Black Pepper
For the sauce:
100g Unsalted Butter
80g Brown Sugar
65ml Cider Vinegar (or white wine vinegar)
4 Garlic Cloves (finely chopped)
¼ Tsp Salt
¼ Tsp Black Pepper
Method:
1. Preheat oven to 160C/320F (standard) or 140C/290F (fan)
2. Place Sauce ingredients in a saucepan over medium heat. Once butter has melted, stir to combine then leave for 1 – 2 minutes until sugar is melted. Remove from heat
3. Line roasting tray/pan with foil
4. Place pork in the tray/pan, sprinkle pork with salt and pepper
5. Pour the sauce from above all over pork. Cover with foil.
6. Place in the oven, bake for 1 hour and 15 minutes
7. Remove from oven, remove foil cover, turn the pork and then return to oven uncovered for 15 minutes
8. Remove from oven, turn pork, and then spoon pan juices over. Return to oven for 10 minutes or until pork is golden
9. Stand for 5 minutes, serve on a bed of lettuce
