Stir Fry Noodles & Vegetables in Oyster Sauce (Chinese Vegetarian Recipe)

Welcome to Xiao’s Kitchen. My name is Xiao Wei and my goal is to make your cooking simple and exciting. Ever since my Mother showed me how to cook at an early age, I have always had a strong passion for cooking. My family still live in Inner Mongolia, in the northern part of China, where I visit each year and learn new Chinese recipes.

100g Egg Noodles
1 Carrot
50g Broccoli
50g Chinese Cabbage
2 Spring Onions
1cm Ginger
4 Cloves Garlic
1 Tbsp Sesame Oil
½ Green Chilli Pepper (or half green pepper)
½ Red Chilli Pepper (or half red pepper)
1Tbsp Ground Sichuan Pepper
2 Tbsp Oyster Sauce
50ml Vegetable Stock
Salt to Taste

1. Finely chop spring onions, ginger, garlic and chilli peppers.
2. Slice carrot into thin thread, cut broccoli and cabbage into bite-size pieces
3. Bring 1 litre of water to the boil in the pan and blanch carrot, broccoli for 10 to 15 seconds, drain
4. Place noodles in the same water, boil for 5 to 8 minutes then drain.
5. Heat 2 Tbsp of oil in the wok until smoking hot.
6. Add ginger, garlic, spring onions, Sichuan pepper and fry few seconds.
7. Add the chilli and fry for a minute.
8. Add noodles, soy sauce, salt and stock into the pan, stir fry for a minute.
9. Add the vegetables, stir fry for a minute then drizzle sesame oil.
10. Transfer to a dish, serve and enjoy.
