Neer poosanikai sambar

toor dal – 1/2 cup
water – 2cup
cumin seeds – 1/2tsp
turmeric – 1/2tsp
garlic – 5
tomato – 1
shallots – a handful
whistle – 4

seasoning for sambar
~~~~~~~~~~
oil – 1tbsp
mustard seeds – 1/4tsp
curry leaves
hing
green chilli – 3
shallots – 10
surakkai / bottle gourd – 2cup
boiled dal
enough water
salt to taste
tamarind juice – 1/4 cup
coriander to garnish
a pinch of sugar ( optional )

Snake Gourd AKA Pudalangai kootu
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
oil – 1tbsp
mustard – 1/4tsp
curry leaves
onion – 1
Pudalangai – 1 cup
green chilli – 2
coconut paste made with 1/4cup coconut, 1/4tsp fennel seeds, garlic – 3
channal dal – 2tbsp (soaked in water for 30mins)
water if needed
coriander leaves to garnish

Potato Fry
~~~~~~~~~
oil -2tsp
mustard – 1/4tsp
jeera / cumin – 1/4tsp
curry leaves
turmeric – 1/4tsp
chilli powder – 3/4tsp
potato – 2
salt to taste

Uppu Paruppu
~~~~~~~~~~~~
moong dal – 1cup ( soaked for an hour )
water – 3 1/2cup
turmeric – 1/2tsp
cumin seed / jeera – 1/2tsp
tomato – 2 (small)
whislte – 1 in very low flame

seasoning
~~~~~~~~~
oil – 1tbsp
mustard – 1/4tsp
curry leaves
hing
green chilli – 2
cooked moong dal
salt to taste
coriander to garnish

add ghee while serving

Puli Rasam
~~~~~~~~~~~
tamarind water – 1cup ( extracted from small lemon size tamarind )
cumind seeds – 1tsp
pepper corns – 1tsp
garlic – 4
red chilli – 2
tomato – 1

seasoning
~~~~~~~~~~
oil – 1tsp
mustard seeds – 1/4tsp
curry leaves
hing
tamarind juice mix
add water if needed
rock salt
coriander leaves

Semiya Javvarisi Payasam / Vermicelli Sago Kheer
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
javvarisi / sago – 1/4cup
dry roast and keep aside
ghee – 1/2tsp
cashews – 5
kismis -10
water – 4cup
add roasted javvarisi
add semiya
once cooked add sugar – 3/4cup – i forgot to mention in the video sorry ๐Ÿ™
then add boiled – 750ml milk
finally cardamom – 2
roasted cashews & kismis
serve hot or chill

Medu Vada / Urad Dal Fritters
~~~~~~~~~~~~~~~~~~~~~~~~~~
urad dal – 1cup ( soaked for 45mins )
onion – 1
coriander leaves
curry leaves
ginger – 1 inch
green chilli – 2
pepper corns – 1tsp
salt to taste
