How to Make Beans
Preparation time: 36 hours soaking + 50 min of cooking | Yield: 8 cups
4 cups of beans
3 carrots
5 oz pork belly chopped
4 cloves garlic
1 tablespoon of salt
1 tablespoon of dehydrated flaked celery
Method of preparation:
1 – Boil 10 cups water, add 4 cups of raw beans, boil for 2 minutes. Soak for 36 hours. (Be prepared that you will see a layer of greenish foam forming on top of the beans!)
2 – Discard all the water left in the beans and wash in running water. Reserve the beans.
3 – In the blender, add 3 raw carrots, 2 cups of water and blend for 2 minutes or until it turns in a carrot juice.
4 – In a large saucepan, place the beans, the carrot juice and 6 cups water. Cook for 30 minutes over high heat.
5 – In a small saucepan, place the chopped pork belly and cook for 10 minutes, stirring only half way through the process. Add 4 cloves of chopped garlic and fry for 1 minute.
6 – Pour the bacon, garlic and oil in the beans, add salt and celery, mix well and cook for another 20 minutes or until the grain is soft.
7 – Serve or freeze for up to 2 months.
