MY VEGETARIAN LUNCH

These foods are my favourites to prep for lunch! They’re versatile, easy to make and healthy. I’ve really started enjoying eating plant-based foods, especially since having discovered how to make them more substantial. I think there’s some misconception about the fact that vegetarian diets are unfulfilling or unable to satisfy hunger, but when you get the right ingredients together, it’s SO GOOD!!

PS. I’m not vegan nor vegetarian but really do enjoy meat-free dishes often!

Here are the foods and the ingredients I used to make them:
BEETROOT & QUINOA PATTIES
– [ ] Beetroot
– [ ] Quinoa
– [ ] Spelt Flour
– [ ] Salt + Pepper
– [ ] Flat Parsley
– [ ] Oat Flour
Eat in:
* Charcoal Burger with Guacamole, Mango slithers and chipotle sauce
* Salad with mixed greens, feta, glazed walnuts, avocado, roast pumpkin
* Broccolini & Kale Salad with an oil, vinegar & tahini dressing

CORN, KALE, FETA & QUINOA FRITTERS
– [ ] Corn
– [ ] Kale
– [ ] Danish Feta
– [ ] Quinoa
– [ ] Potatoes
– [ ] Spelt Flour
– [ ] Salt + Pepper
– [ ] Sweet Potato
Eat with:
* Tomato Relish
* Avocado & Tomato Salata

BEETROOT HOMMUS
– [ ] Beetroot
– [ ] Chickpeas
– [ ] Garlic
– [ ] Lemon
– [ ] Tahini
– [ ] Salt
Eat with:
* Crackers
* Vegetable Sticks (Carrots are my favourite)
* Crumbed Feta on toast, with Sicilian Olives on the side
