This Keto Carrot cake recipe was such a shocker. I was not expecting to make a frosted carrot cake and fit a hearty slice in 4 net carbs. Try this recipe and let me know your experience in the comments section.

Ingredients for the cake:
3 cups grated carrot
5 eggs
1/2 Cup Desiccated Coconut
200g / 7 oz Butter melted
1 Cup Erithrytol
1 cup Almond flour
½ Cup ground Flax Seed
2 tsp Baking powder
1 tsp Ground cinnamon
¾ cup chopped Walnuts

Cream Cheese Frosting:
200g Cream cheese
½ Cup Erythritol
½ tsp Vanilla Essence

    Okay so I did make this, it came out to the closest thing. In the video it says almond flour but in the description it says 1 cup of ground almonds, so I was unsure. I did everything exact but I used a silicone square pan and noticed that it took way longer to make than 30 mins. More like an hr. It was really good and amazed how you came up with this, thank you. 😊😊

  3. I made this today and it's easily the best carrot cake ever. My favourite recipe has always been the BBC Foodaid one and yours is a keto version of it. I used 2cups of almond flour as I didn't have flax and reduced the eggs to 3 as the mix looked looser than yours at that stage. It's light but moist and incredibly filling. I did a square traybake which made 16 portions. 1 piece alone would be great for breakfast/lunch on the go as it's VERY filling and calorie dense. This would easily see me through to dinner.

  9. I made this today exactly as you did, and it was absolutely fantastic! It made a lot, so I am going to freeze most of it, but I have a friend who I am giving a couple pieces to, who is low carb. I am going to tweak the recipe a little bit to my personal taste and hope you are not offended by it. I am going to skip the nutmeg and just use the cinnamon, and I am going to replace a little bit of the cream cheese with butter in the frosting. Thank you so much for such a great recipe!

  16. Do you have any recommendation for the amount of coconut flour I’d have to use in place of almond flour? It’s cheaper and seems since there’s already coconut in this it’d be a better option. I tried looking it up and what I found seems to indicate 1/4 cup of coconut flour for every 1 cup of almond flour…..and possibly an extra egg.
