Healthy Vegetarian Dinner Recipes: Kale Salad, Burgers, Pasta

In today’s video we are going to be making some healthy vegetarian dinner recipes. We will be making some kale salad, vegetarian burgers, and some vegetarian pasta. Let me know if you want me to make some more cooking videos!

Bean Burgers with Avocado Basil Cream:

Easy Double Bean Burgers

makes 6 burgers

1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can cannellini beans, drained and rinsed
1 large egg + 1 large egg white, lightly beaten
1/2 cup panko bread crumbs
3 tablespoons olive oil
3 tablespoons fresh cilantro, chopped
4 garlic cloves, minced or pressed
1/2 teaspoon smoked paprika
1/2 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon pepper
6 whole grain buns, toasted if desired

Avocado Basil Cream

2/3 cup sour cream
1 avocado, chopped
10 medium basil leaves, chopped
1/4 teaspoon salt
pinch of pepper

Kale Walnut Pesto and Blistered Tomato Pasta:

Kale Walnut Pesto
6-8 kale leaves, stems removed
10 basil leaves
¼ cup raw walnuts
¼ cup grated parmesan cheese
3 cloves of garlic
1 teaspoon salt
1 teaspoon pepper
½ cup olive oil

1 pint grape tomatoes
1 tablespoon olive oil
½ teaspoon salt
½ teaspoon pepper
1 pound pasta
parmesan for garnish

Kale Salad with Meyer Lemon Vinaigrette:

4 cups chopped kale
1 avocado, diced
1/2 cup cooked quinoa
1/2 cup pomegranate arils
1/2 cup chopped pecans
1/4 cup crumbled goat cheese

For the Meyer lemon vinaigrette
1/4 cup olive oil
1/4 cup apple cider vinegar
3 tablespoons freshly squeezed Meyer lemon juice
Zest of 1 Meyer lemon
1 tablespoon sugar
