β€’ Tortilla Soup:
Β½ can Fire Roasted Tomatoes (can sub regular but will be less flavorful)
Β½ cup Salsa
Β½ cup Water
Β½ can Black Beans
Β½ cup Frozen Corn, thawed
ΒΌ tsp Chili Powder
ΒΌ tsp Cumin
Pinch of Cayenne Pepper
1 Corn Tortilla, sliced thinly
Toppings: Lime Juice, Cilantro, Nutritional Yeast, Avocado
* Combine all ingredients except toppings in a microwave safe bowl and cook for 2-3 minutes, depending how scalding you like your soup (hehe). Top as desired!

β€’ Black Beans and Mexican Rice
Β½ can of Black Beans
1 8 oz. pouch Microwave Rice (I used brown)
ΒΌ tsp Cumin
ΒΌ cup Corn
ΒΌ cup Salsa
Toppings: Cilantro, Lime, Avo
* Prepare the Microwaveable Rice according to package instructions, then add the remaining Rice ingredients to a large bowl with the rice and stir well. Serve with (warmed) beans and whatever other toppings you desire

β€’ Microwave Enchiladas
Β½ can Fire Roasted Tomatoes
Β½ cup + 2 tbsp Salsa, divided
Β½ can Black Beans
ΒΎ cup Corn
2 tbsp Fresh Cilantro, chopped
ΒΌ tsp Cumin
ΒΌ tsp Chili Powder
5-6 Corn Tortillas
Toppings: Nutritional Yeast, Cilantro, Avocado, Lime
* First, make the enchilada “sauce” by mixing Β½ cup Salsa with Β½ of a can of Fire Roasted Tomatoes. Then, prepare the filling by mixing all remaining ingredients together in a bowl, except the Corn Tortillas. Spread Β½ cup of the Sauce mixture into the bottom of a large microwave save pan, then make your enchiladas by filling each corn tortillas with a few spoonfuls of the Black Bean mixture. Place the open side of the enchiladas face down into the pan, then cover with remaining sauce and Nutritional Yeast. Microwave for 3 minutes and top as desired.
