Crispy Quinoa Cakes (Healthy Vegetarian Dinner Recipe)

Hi, it’s Aviva Goldfarb. Welcome to my kitchen. Today we’re going to make a healthy, vegetarian dinner that is really satisfying and kind of different: Crispy Quinoa Cakes.

These are quinoa mixed with some really yummy, filling, and colorful ingredients. And then you cook them in a skillet until they’re crispy on the outside and kind of creamy on the inside. Let’s do it!

You want to cook one cup of quinoa in two cups of water. Put that quinoa in a bowl and combine it with one finely grated carrot, about three quarters of a cup; two thinly sliced scallions; four eggs, lightly beaten; and a half cup of low fat—or whatever kind you like—cottage cheese; three quarters of a cup of crumbled feta cheese, or you can use cheddar cheese, if you prefer that; three tablespoons of whole wheat flour, or you can use gluten free flour or potato flour; a quarter teaspoon of black pepper; half teaspoon of ground cumin; and a half teaspoon of salt.

You’re going to get that all combined and you’re going to heat up in a large skillet a couple of tablespoons of olive oil. And you’re going to pour the mixture by quarter cup increments into the skillet and flatten it, and cook them until they’re crispy and brown on the outside. Once those are all cooked, dinner is ready!

I was inspired to make these quinoa cakes by my favorite lunch when I go out to eat at Le Pain Quotidien, which is a Belgian café chain, at least on the East Coast. They have quinoa cakes that are so good. And they serve them with sort of a tomato sauce and hummus. But Abi, my videographer, suggested sour cream, or avocado is really good on them. Just get really creative with these. But you are going to love them! And they’re so healthy, of course, but more importantly, so delicious.
