1 kilo pork belly, whole cut.
2 cloves crushed Garlic
3 Bay leaves
1 tsp peppercorns
1 tsp salt
6 cups water
2 cups cooking oil for frying.

Wash pork belly, cut into large chunks and place in a large pot.
Add enough water to cover the pork belly.
Add peppercorns, garlic, bay leaves, salt. cover and bring to a boil, simmer simmer for 45 1 hour.
Remove all scum.
Remove from the pot, place in a Salaan (Colander ) and let sit for a while so that the liquid will drain.
Dry with paper towels if necessary.

In A large pot heat enough oil and deep fry the pork at low heat for about 30 minutes or until the pork golden brown.
When done remove from the pot and drain oil in a Salaan or paper towels, allow to cool completely. Share and enjoy!
