3 Easy One-Pot Dinners | Vegan, Quick and Healthy

Here are 3 easy one pot meals that you can whip up in no time in the middle of the week! We had a pot, a spoon, an induction cooker and a dull knife. If we can do it, you can do it!

Quinoa Chilli
1 onion
4 cloves of garlic
A few sprigs of green onion
1 capsicum
1 chilli (seeds removed if you don’t want it too spicy)
1 tinned tomatoes
1 tinned black beans
1 cup quinoa
1.5 cups low sodium veggie stock
1 bunch of coriander

Mung Dahl
1 onion
4 cloves of garlic
1 tsp cumin seeds
1 tsp mustard seeds
Large knob of ginger, grated if possible (we didn’t have a grater)
1 large potato
1/2-1 tsp garam masala
1 cup mung dal (split yellow mung beans)
3-4 cups veggie stock

Peanut Thai Noodles
1 pack of rice noodles
1 onion sliced
1 carrot thinly sliced (slice thinner than we did so it cooks completely)
1 sliced capsicum
Green onion
Bunch of coriander
2 cups of low sodium veggie stock
1 cup of water (using more if necessary)
3 large spoonfuls of peanut butter
drizzle of soy sauce
