Easy and healthy pasta salad with vegetables like peas, red bell pepper and red cabbage. With it’s delicious Turkish yogurt sauce it will be your one of the favorite pasta salad recipes.
For the recipe i used vegetable that i put in the freezer when it is the seasons. But you may use store bought, fresh if you can find or canned cooked vegetables also.
Here are the ingredients for the vegetable yogurt pasta salad:
1 cup cooked green peas
1 cup roasted red bell pepper (chopped in cubes)
3/4 cups cubed pickles
1 cup cooked corn kernels
400 to 500gr. ring or and small similar shape pasta (cooked until soft and drained)
1/4 of medium red cabbage (sliced and sauteed with 2-3 tbsp olive olive until somewhat soft)
About 1+1/2 to 2 cups plain turkish yogurt
3-4 tbsp mayonnaise
1 tsp each or to taste salt, red pepper flakes and dried mint
