This video is a chicken recipe with a white creamy corn sauce called Fricasse- it is a Brazilian dish and we eat it with Brazilian rice.My family always makes this recipe for Sabbath lunch as well as special occasions. We make a vegetarian version that is great as well. I hope you guys enjoy seeing a little bit more of my culture/Brazilian cuisine. -4 chicken Breasts
-1 medium white onion
-5 cloves of garlic
-1/4 cup of chopped cilantro
-1-2 cups of shredded mozzarella cheese
-1 cup of potato sticks
-2 sticks of cream cheese
-1 cup of milk
-2 cans of corn
-2 cups of frozen corn
-1 can of creme de leite/cream of milk or heavy cream
-Seasoning: 1 table spoon of black pepper, 1 tsp of salt, 1 cube of chicken bullion, 1 tsp of dried basil, olive oil and red pepper flakes to taste
-(OPTIONAL) 1 cup of chopped mushroom
-Add garlic, onion, all seasonings and cilantro to a pan with olive oil and let onion turn translucent. Then add chopped chicken breast and mix around until it starts to brown. Then add 2 cups of frozen corn and let it cook for about 3 more minutes.
Sauce: In a blender add cream of milk/heavy cream, cup of milk, cans of corn, both sticks of cream cheese and a bit of salt to taste.
Add corn sauce to cooked chicken and cook everything together for about 5 minutes until sauce thickens a bit and proceed to dump chicken and sauce on a baking dish. Add mozzarella on top. Cook at 350F for 10-15 minutes and then broil until cheese browns. Once you remove from oven add potato sticks and it is ready to serve. This recipe should take about 25-30 minutes. You can also make it ahead of time, store it in fridge and bake when guests arrive.
-4 cloves of garlic
-Cooking oil of your choice
-2 table spoons of salt
-3 cups of rice
-6 cups of water/chicken stock (or enough to cover rice for about 1-2 inches)
Let garlic and oil cook until garlic is slightly brow, add rice and then salt. Keep mixing it for about 3 minutes and add hot water. Let it boil and then reduce heat to low. Once heat is reduced cover pan with lid and let water fully dry. This should take 15-20 minutes. Serve it warm with chicken dish over top.
