– 1/2 pound pasta
– 1 avocado
– 1/2 cup spinach
– 1/4 cup basil
– 1 T olive oil
– 1 clove garlic
– 1/2 cup reserved pasta liquid
– 2 T slivered almonds
– pinch of salt
1) Start cooking pasta and reserve 1/2 cup of pasta liquid.
2) In blender, blend avocado, spinach, basil, almonds, garlic and salt until very smooth.
3) When pasta is cooked, mix in sauce. Thin with pasta liquid, as needed to create desire consistency.
