Today I’m sharing one week of healthy meal prep recipes! All recipes are vegetarian, gluten free, easy, healthy and will have you feeling amazing! I also love to keep some sweets in the mix, so I’m also including a recipe for some chocolate peanut butter keto cups which are so fun!
This prep is for one person, but feel free to double or triple if you’re prepping for more than one person! Hope you guys love these recipes as much as I do!!
1/2 cup pine nuts, toasted
8 oz tempeh, cut in 1/2 inch cubes
2 tablespoons refined coconut oil
5 oz arugula
3 cooked beets, cut in 1/2 inch cubes
2 oz. crumbled feta
5 tablespoons hummus
extra virgin olive oil
1. Toast the pine nuts. Place them in a pan over medium-low heat and toast for about 10 minutes, stirring constantly until they are golden brown and fragrant. Once they are perfectly toasted, set aside in a bowl.
2. Wipe out the pan and add the tempeh and coconut oil over medium-high heat. Cook for about 10-12 minutes, stirring frequently to brown all sides of the cubes.
3. Divide the arugula in each meal prep container. Add the beets, temeph, pine nuts, feta, and hummus to each container.
4. In separate containers prep the dressing – about 1 tablespoons EVOO and 1 tablespoon balsamic vinegar in each small dressing container.
