Kootu Recipe | Vegetable Kootu Recipes  Variety 2  | Karnataka Kannada Recipes

Kootu can be prepared in many different ways many different vegetable. We already have one variety of Mixed vegetable kootu, and this is variety 2 with little different Masala.
Ingredients:
Vegetables:
you can use vegetables of your choice – use all the leftover vegetables
around 10 – 2 inch cut drumstick / nuggekayi
around 6 tondekai / ivy gourd / tindora cut into 1 inch pieces
1/2 cup cut winter melon
1/2 cup cut sweet pumpkin
1/2 cup cut elephant yam / suvarnagadde
1/2 cup cut beans
1/2 cup cut carrot
1 tomato
For Masala:
1 tsp Coconut oil
3/4 tsp split black gram / uddina bele / urad dal
3/4 tsp split bengal gram / kadale bele / chana dal
1/2 tsp menthya/ fenugreek seeds
1/2 tsp sesame seeds
1/2 tsp gasagase / poppy seeds
10 to 15 pepper
For the Dal:
1/3 cup toor dal
1/4 tsp turmeric powder
1/4 tsp oil
4 to 6 byadgi red chillies
little hing/asafetida
4 tsp coriander seeds
1/2 cup grated coconut
For seasoning:
1 tsp ghee
1/4 mustard seeds
few broken red chillies
Other ingredients:
5 to 6 cups of water
small keylime size tamarind soaked in water
1 to 2 tsp Jaggery
3/4 tbsp salt or salt to taste
10 to 15 curry leaves
chopped coriander leaves
