Italian Panzanella (Summery quinoa salad) – Recipe by The Vegan Corner

Here is the recipe for a traditional and delicious Italian summery dish called Panzanella. Enjoy!


7oz uncooked quinoa (1.4lb cooked)
12.3oz tomatoes, weight after removing water and seeds
5.3oz cucumber
5.3oz red onion
3.5oz capers in vinegar, drained
10-15 basil leaves (roughly 0.4oz)

How to cook quinoa:


INGREDIENTS (International):
200g uncooked quinoa (650g cooked)
350g tomatoes, weight after removing water and seeds
150g cucumber
150g red onion
100g capers in vinegar, drained
10-15 basil leaves (roughly 10g)

How to cook quinoa:


– The capers can be soaked in water for 20-30 minutes to remove most of their salt


Makes: 4-5 servings – 1.4kg/3.1lb of salad
Preparation time: 15 minutes + the time to cook quinoa
Storage times: Keeps for 2 days in the fridge

  14. This looks amazing, will definitely try this out for a party that's coming up! Do you think it would work with couscous as well? Quinoa is a bit on the expensive side for a student budget.
