Learn how to make Mediterranean Roasted Vegetables, a simple yet delicious dish. Packed full of flavour, this is our favourite style of roast vegetables.

Ingredients for 2 people:
500 g of small potatoes
400g of hot peppers, red
200 g of mushrooms
150 g of cherry tomatoes
100 g of feta cheese
6 cloves of garlic
Lots of olive oil
Preheat oven to 200 C. Place a good amount of olive oil in a pan, wash and cut the potatoes in half and fry briefly. Remove seeds and add hot peppers cut in half. Then, mix with herbs and place in an ovenproof dish.
Cut tomatoes into quarters, the mushrooms in half and dice the feta cheese. Cut the onion into rings and peel garlic (feel free to add garlic to taste but bear in mind that this kind of dish should not have a strong garlic aftertaste).
Add all ingredients, potatoes and hot peppers to the baking dish, stir and season with sea salt, pepper, cumin and chilli. Bake in the oven for about 30 minutes (depending on size of potato). Stir occasionally. Serve.
