Ingredients list

Aloo stir fry / aalugadde palya
*******************************

3 potatoes (i have used big ones)
1 onion
2 green chillies (adjust to your taste)
3 tbsp cooking oil
1 tsp mustard seeds
1 tbsp channa dal /bengal gram
2 tbsp coriander leaves Chopped
2 tbsp grated fresh coconut or desiccated coconut (optional)

Zucchini stir fry / palya

1 zucchini (big)
1 onion
2 tomatoes
4 tbsp roasted and coarsely grounded peanuts
2 tbsp oil
1 tbsp red chilli powder
1th tsp turmeric powder
1 tsp channa dal
1 tsp mustard seeds
Few curry leaves
2 tbsp coriander leaves Chopped
Salt as required

Palak (spinach) dal side dish (palya)

1 bunch Palak/spinach leaves
1 cup cooked toor dal /togari bele /split pigeon pea
2 tablespoons cooking oil
1 teaspoon mustard seeds /sasive
5 to 6 dried red chillies (byadagi menasinakaayi) – adjust to your taste
Salt as required
2 tablespoons fresh /desiccated coconut

Pumpkin side dish (palya)

1 of a medium sized pumpkin(sihi kumbalakai)
3 to 4 teaspoons of cooking oil (enne)
1 teaspoon mustard seeds (sasive)
1 teaspoon channa dal(kadale bele, Bengal gram)
6 to 8 dry red chillies (ona menasinakaayi) – adjust to your taste
10 to 12 curry leaves (Kari bevu)
2 teaspoons of roasted bengal gram (huri kadale)
5 to 6 teaspoons of grated fresh coconut /desiccated coconut (Kai turi)
Some coriander leaves (kothambari soppu)
Salt as required
