A simple vegetarian lunch menu of rice and curry

Muringakka Sambar / Drumstick Sambar

Toor dal – ½ cup
Water – 2 cups
Muringakka / Drumstick – 2
Onion – 1 (small)
Tomato – 2
Green chilli – 1
Tamarind – gooseberry sized
Mustard seeds
Fenugreek seeds – ¼ tsp
Cumin seeds – ½ tsp
Curry leaves
Asafoetida powder
Kashmiri Chilli powder – 1 tbsp

Beetroot Poriyal

Beetroot – 1
Mustard seeds – ½ tsp
Urad dal – 1 tsp
Cumin seeds – ½ tsp
Curry leaves
Green chilli – 2-3
Ginger – 1 tsp
Onion – 1 (small)
Grated coconut – 4-5 tbsp

Vendakka Mezhukkupuratti

Vendakka / ladies finger – 200 gm
Onion – 1 (small)
Green chilli – 2
Curry leaves
Turmeric powder – ¼ tsp
Chilli powder – 1 tsp
Oil – as needed
